Easy English plum pudding recipe. This magic Christmas plum pudding is a wonderful part of the celebrations and very easy to make. It can be made in advance and gets much better with age.

Chocolate Pudding Recipe

Makes 5 servings

Ingredients: 1/4 cup (60 ml) unsalted butter, 1/4 cup (60ml) granulated sugar, 2 tablespoons (30 ml) boiling water, 1 large egg, lightly beaten, 1/2 teaspoon vanilla extract, 1/3 cup (80 ml) cocoa powder, hot water, raspberry jam, 1 cup (250 ml) all-purpose flour, sifted with 1 teaspoon baking powder, dash salt

Instructions: In a large mixing bowl, combine the butter, sugar, and boiling water. Beat well. Add the egg and vanilla extract. Beat thoroughly. Put the cocoa powder into a cup, making up to 1/2 cup (125 ml) with hot water, mix together until blended, and cool.

Grease 5 custard cups well and put a generous teaspoon raspberry jam in the bottom of each. Sift the flour and salt, then sift into creamed mixture. Add the cocoa mixture and mix all until blended.

Divide the mixture among the prepared molds. Preheat a large nonstick skillet with 3/4 inch (2 cm) water. Place the molds in, then cover with a lid and cook for 20 minutes. Turn out and serve hot with Chocolate Sauce (recipe follows)

Chocolate Sauce Recipe

Ingredients: 1/4 cup (60 ml) cornstarch, 1/4 cup (60 ml) cocoa powder, 1/4 cup (60 ml) granulated sugar, dash salt, 1½ cups (375 ml) hot water, 2 tablespoons (30 ml) unsalted butter, 1/2 teaspoon vanilla extract

Instruction: In a small saucepan, combine cornstarch, cocoa, sugar, and salt. Mix well. Add sufficient of the hot water to blend, then add the remaining water. Stir over medium heat until it boils and thickens. Mix in the butter and vanilla extract.

Serve hot, poured over chocolate pudding.

Easy English Plum Pudding Recipe

Ingredients

  • 1/4 cup (60 ml) unsalted butter
  • 1/4 cup brown sugar
  • 1 cup (250 ml) milk
  • 12 dates, pitted and chopped
  • 1/2 cup (125 ml) seedless white raisins
  • 1/4 cup (60 ml) currants
  • 1/4 cup mixed candied peel, chopped
  • finely grated rind of 1 orange or lemon
  • 1 teaspoon baking soda
  • 1 cup all-purpose flour, sifted with 1 teaspoon baking powder
  • 2 teaspoons mixed spice cinnamon
  • dash salt
  • custrad, whipped cream

Method

Step 1

Grease well 1½-quart (1½ L) pudding mold and line the bottom with greased wax paper. Put the butter, sugar, and milk into a saucepan. Add the chopped dates, raisins, currants, peel, and chopped rind. Bring to a boil over medium-high heat.

Step 2

Remove from the heat, add the baking soda, and allow foaming. Sift in the flour, spice, and salt. Mix lightly until blended. Empty into the prepared bowl. Cover with the lid and steam 2 hours.

Step 3

Turn out and serve with custard, whipped cream, or ice cream.
