Easy Indian ghee rice recipe. Very easy vegetarian dish. For the best results in cooking rice, it is very important to know what kind of rice to use in various dishes.
Long-grain rice is required for Indian or Middle Eastern rice dishes such as pilaf or boiled as an accompaniment to curries.
Indian ghee rice-is rice cooked in boiled chicken stock with herbs, raisins, and almonds. Use basmati or long-grain rice for this recipe.
Easy Indian Ghee Rice Recipe
Ingredients
- 4 ½ cups basmati or long-grain rice
- 1/2 cup ghee
- 2 yellow onoons,peeled and thinly sliced
- 1 teaspoon turmeric plus some extra
- 1/2 teaspoon saffron
- 10 cardamon pods, bruised
- 1 teaspoon peppercorns
- 4 cloves
- cinnamon stick
- 7 ½ cups (1.9 L) chicken stock
- 3 teaspoons salt
- 3/4 cup seedless white raisins
- oil for frying
- 3/4 cup blanched almonds
Method
Step 1
Wash well rice, changing 3-4 times water (very important). Put into a large sieve and allow to drain well for at least 1 hour.
Step 2
In a large pan,heat ghee over medium-high heat. Add sliced onion and fry until golden brown.
Step 3
Stir in the turmeric, saffron, cardamom pods, peppercorns, cloves, and cinnamon. Add drained rice and fry for a few minutes, turning it over until ghee is absorbed and rice is golden.
Step 4
Pour in chicken stock and season with salt. Stir well and bring rice mixture to a boil over high heat.
Step 5
Reduce heat to low and simmer rice gently. Cover the pan tightly and cook for 15-20 minutes. After 10 minutes, sprinkle raisins over the rice. Do not stir.
Step 6
At the end of cooking time, remove the pan from the heat. Open the lid for a few moments to allow to steam to escape, then close tightly again until ready to serve. Keep warm.
Step 7
When you ready to serve, garnish with fried almonds. Serve rice warm.
