Prosciutto-Wrapped Asparagus Recipe
This is a very delicious combination of salt-cured ham and crunchy barbecued asparagus.
Makes 6 servings
Ingredients: 12 thin asparagus spears, trimmed, extra-virgin olive oil, freshly ground black pepper, to taste, grated parmesan cheese, 6 slices Italian prosciutto, halved
Instructions: Preheat your barbecue grill to high. Lightly brush asparagus with extra-virgin olive oil. Place on preheated grill and grill, turning once, until tender and crispy, for about 4 minutes. Remove grilled asparagus from the grill and transfer to a work surface. Season to taste with black pepper, then sprinkle with grated Parmesan cheese.
Wrap each spear tightly with prosciutto half, leaving the tip exposed. Serve warm.

Makes 24 pieces
Ingredients: 3 cloves garlic, peeled and pureed, 2 tablespoons (30 ml) extra-virgin olive oil, 12 fingerling potatoes, freshly ground black pepper, to taste, 12 slices prosciutto, halved
Instructions: In a small mixing bowl, combine garlic and olive oil. Mix well. Cover with a lid and set aside for 30 minutes, then strain, using a fine sieve and discarding the garlic.
Preheat an oven to 400ΒΊ F (200ΒΊ C). In a large mixing bowl, combine potatoes and garlic-infused oil. Toss potatoes well. Place potatoes on a rimmed baking sheet and roast in the preheated oven until tender, for about 30 minutes.
Turn off the oven and remove baked potatoes. Transfer to a serving bowl and allow cooling. Season to taste with black pepper, then wrap each cooked potato in a slice of prosciutto and secure with a toothpick. Place prosciutto-wrapped potatoes in a large nonstick skillet and cook until prosciutto is crispy.
Serve warm.

Ingredients
- half honeydew melon
- 8 paper-thin slices prosciutto
- 2 limes
- 4 fresh figs (optional)
Method
Step 1
Cut melon into four wedges; remove rind. Place on salad plates; arrange prosciutto over melon.
Step 2
Cut limes and figs into quarters and divide among plates. Sprinkle melon and prosciutto with black pepper.
