Potted Shrimp Appetizer Recipe
Potted shrimp is a traditional English dish. Serve them on plain crackers or sliced French baguette.
Makes about 1 cup (250 ml)
Ingredients: 1/2 pound (240 g) raw shrimp, peeled and deveined, 1 tablespoon (15 ml) fresh thyme leaves, 1 clove garlic, peeled and chopped, salt and freshly ground white pepper, 1/8 teaspoon freshly ground nutmeg, 1/4 cup (60 ml) clarified butter, 1 tablespoon (15 ml) freshly squeezed lemon juice
Instructions: In a food processor fitted with metal blade, combine shrimp, fresh thyme, garlic, 1/2 teaspoon salt, 1/4 teaspoon white pepper, and grated nutmeg. Process until shrimp are finely chopped and the mixture blended, for about 15 seconds.
heat a medium saucepan over medium heat. Add clarified butter and bring to a simmer. Add the shrimp mixture, then return to a simmer and cook, stirring constantly, until shrimp are pink and opaque, for about 5 minutes.
Remove the potted shrimp from the heat. Stir in lemon juice. transfer shrimp to a serving dish. Cover with a lid and refrigerate until butter solidifies. Serve on sliced baguette.
Twisted Butterfly Shrimp Recipe
Grilled marinated twisted butterfly shrimp. very delicious! Serve with Truffle Vinegar or the Classic Cocktail Sauce.
Makes 8-10 shrimp
Ingredients: 8-10 raw jumbo shrimp, peeled and deveined, tails intact, 1 tablespoon (15 ml) minced lemon zest, 1 tablespoon (15 ml) minced garlic, 1 teaspoon (5 ml) brown sugar, 1/4 teaspoon freshly ground white pepper
Instructions: Cut shrimp in half lengthwise to tail with a very sharp knife. Transfer to a large bowl. Stir in lemon zest, garlic, sugar, and pepper. Marinate, unclosed, for 1 hour.
Remove marinated shrimp from the bowl. Hold shrimp at the tail, then twist two halves together to intertwine them.
Grease your grill with nonstick cooking spray. Heat to high. Grill shrimp, turning often until they are pink and opaque, for about 2-3 minutes. Remove frilled shrimp from the grill and transfer to a serving plate. Serve immediately.
