Easy vegan bean sprout salad recipe. Very easy and healthy vegan salad. Serve it with oriental food if desired.
How to Wash Salad Greens
The importance of having perfectly crisped greens cannot be over-emphasized, for matter how perfect dressing is, it can be ruined by moisture. Remove the core from the head of lettuce, lay the head in a colander, and allow a slow flow of cold water to run into the cavity. This will gently loosen and separate the leaves. Carefully wash each leaf under cold running water. Shake free of excess water, then dry gently with clean paper towels.Β Pack loosely in a clean, dry paper towel. And, finally, roll up tightly or place in an air-tight plastic container. Refrigerate to crispen.

Three Bean Salad Recipe
makes 8-10 servings
Ingredients: 2 cups cooked green beans, 1 cup cooked kidney beans, 1 cup cooked chickpeas, 1 cup sliced fresh celery, 1/2 cup chopped green peppers, 2 oz (60 g) pimientos, chopped, 1/2 large sweet Spanish onion, peeled and sliced into rings,Β 1/3 cup (80 ml) olive oil, 1/3 cup (80 ml) vinegar, 1/4 cup (60 ml) clear honey, 1 teaspoon wheat-free tamari sauce, 1-2 garlic cloves, peeled, 1/8 teaspoon cayenne pepper (optional)
Instructions: In a large mixing bowl, combine the green beans, kidney beans, chickpeas, celery, pepper, pimientos, and Spanish onion. Mix well. In a blender, combine remaining ingredients. Process until garlic is liquefied. Pour garlic mixture over vegetables. Toss well. Cover and refrigerate for several hours.
Kidney-Bean Salad Recipe
Makes 6-8 servings
Ingredients: 2 cups cooked kidney beans, 1/2 cup sliced fresh celery, 1/2 cup chopped green bell peppers, 1/2 cup sliced scallions, 2 tablespoons chopped dill pickles, dash of cayenne pepper, 1/3 cup (80 ml) homemade mayonnaise
Instructions: In a large mixing bowl, combine the beans, celery, peppers, scallions, pickles, and cayenne pepper. Toss well. Add homemade mayonnaise and toss lightly to combine. Chill at least two hours before serving.
Easy Vegan Bean Sprout Salad Recipe
Ingredients
- 1/2 cup (125 ml) peanut oil
- 3 tablespoons cider vinegar
- 3 tablespoons soy sauce
- 1 clove garlic, peeled and crushed
- dash of salt
- freshly cracked black pepper
- 1/4 cup finely sliced scallions
- 2 cups bean spouts
- 1/4 cup sesame seeds, toasted
Method
Step 1
In a large mixing bowl, combine peanut oil, vinegar, soy sauce, garlic, and seasoning. Whisk well.
Step 2
Stir in the scallions, and sesame seeds. Toss gently to coat with the dressing.
Step 3
Chill for 1-2 hours before serving. Serve with Oriental food.
