Pressure Cooker Chicken Mac-and-Cheese Recipe

Chicken breasts with macaroni, Dijon mustard, and Cheddar cheese cooked in the pressure cooker.

Makes 4 servings

Ingredients: 1 pound (480 g) boneless and skinless chicken breasts, cut into cubes, 1/2 pound (240 g) dried elbow macaroni, 1½ cups (375 ml) half-and-half, 1 tablespoon (15 ml) all-purpose flour, 2 teaspoons (10 ml) Dijon mustard, 1/2 teaspoon (3 ml) dried thyme, 1/2 teaspoon (3 ml) salt, 1/2 teaspoon (3 ml) freshly ground black pepper, 1½ cups (375 ml) shredded Cheddar cheese

Instructions: In a 6-quart (6 L) electric pressure cooker, combine cubed chicken, macaroni, and 6 cups (1.5 l) water. Close the cooker and lock the lid. Set the machine to cook at high pressure. Set timer to cook under pressure for 8 minutes.

Unlock the cooker and open the lid. Drain the contents in a large colander set in the sink. Turn the electric pot to browning settings. Add the half-and-half, all-purpose flour, Dijon mustard, thyme, and seasoning. Cook, stirring, until bubbling and thickened, for about 2-3 minutes.

Turn off the electric pressure cooker and open the lid. Add the cooked pasta and chicken, as well as cheese, stirring until the cheese has melted. Serve hot.

Electric Pressure Cooker Easy Chicken Breasts Recipe

Ingredients

  • 4 boneless and skinless chicken breasts
  • 1 tablespoon canola oil
  • 1/2 cup (125 ml) chicken broth
  • 4 tablespoons all-purpose seasoning

Method

Step 1

Pound the chicken breasts thin. Cut them into large strips. Season one side of the chicken with all-purpose seasoning.

Step 2

Turn an electric pressure cooker to the browning setting. Add canola oil and heat until very hot. Place the seasoned side of the chicken facing down and season another side. Brown chicken breasts on both sides, turning once or twice.

Step 3

Pour chicken broth over browned chicken. Set the machine to high pressure. Set timer to cook for 12 minutes.

Step 4

Open the pressure cooker, using the Quick Release method. Remove cooked chicken breasts from the cooker and transfer them to serving plates. Serve with your favorite salads.
