Fried bacon-wrapped enoki mushrooms recipe. This is one of my favorite appetizers! Enoki mushrooms have a mild, savory taste and crunchy texture. These mushrooms look like a cluster of small flower buds and reputed to have many healthful properties.

You can also use some blanched asparagus instead of enoki, use also pancetta or prosciutto instead of bacon.

Prosciutto-Wrapped Enoki Mushrooms Recipe
Here is a very delicious combination with salty Italian prosciutto brushed with persillade and grilled on the grill.
Makes 12 appetizers
Ingredients: For Persillade:1/4 cup (60 ml) finely chopped fresh Italian flat-leaf parsley, 2 teaspoons (10 ml) freshly squeezed lemon juice, 1 clove garlic, peeled and puréed (purée the garlic, using a fine sharp-footed grater) 12 slices Italian prosciutto, 6 oz (180 g) enoki mushrooms, divided into 12 bunches, freshly ground black pepper, to taste
Instructions: For Persillade: In a small mixing bowl, combine chopped parsley, lemon juice, and puréed garlic. Mix well and set aside.
Place 1 slice of prosciutto on a clean work surface, then brush lightly with the parsley mixture and season to taste with black pepper. Fold, making an even strip about 1½ inches (3.8 cm) wide.
Wrap the prosciutto tightly around stems of 1 mushroom cluster, holding mushrooms together like flowers. Repeat the same steps with remaining enoki mushrooms and prosciutto.
Preheat your barbecue grill at high. Place enoki wraps on preheated grill and cook, turning once, until prosciutto start browning, for about 4 minutes.
Remove grilled mushroom wraps from the grill and transfer to a serving plate. Serve them warm.

Fried Bacon-Wrapped Enoki Mushrooms Recipe
Ingredients
- 6 oz (180 g) enoki mushrooms
- 12 slices bacon, halved
- a quarter stick of unsalted butter
Method
Step 1
Wash enoki mushrooms under cold running water. Cut off the root parts, then separate mushrooms into 12 bunches.
Step 2
Place the bacon half on a clean work surface. Roll each enoki bunch with bacon half and secure with a toothpick.
Step 3
In a medium nonstick skillet, heat the butter over medium heat. Add enoki wraps and cook, turning once, until bacon turns golden brown, for about 4 minutes.
Step 4
Remove cooked enoki wraps from the skillet. Drain on the paper towels. Serve immediately.
