Fried Coconut Chicken Bites Recipe
Ingredients
- 2 cups (500g) flaked coconut
- 1 large egg, beaten
- 3/4 pound (360 g) boneless and skinless chicken breasts, cut into bite pieces
- 1/2 cup (125 g) all-purpose flour
- cooking oil for deep-fat frying
- 1 teaspoon celery salt
- 1/2 teaspoon garlic powder
- 1/2 teaspoon freshly ground cumin
- 2 tablespoons milk
Method
Step 1
Place flaked coconut in a blender. Blend until finely chopped. Transfer chopped coconut to a bowl and set aside.
Step 2
In another mixing bowl, combine beaten egg and milk. Mix well.
Step 3
Toss chicken bites with flour, then dip in egg mixture, then in coconut. Arrange in a single layer on a baking sheet. Refrigerate for 30 minutes.
Step 4
Preheat 2 inches (5 cm) of cooking oil in a deep-fat fryer. Working in batches, fry chicken bites for 1 1/2 minutes on each side or until golden brown. Pat dry with a paper towel and place in a bowl.
Step 5
Season with celery salt, garlic powder, and ground cumin. Toss well to coat. Serve warm with your favorite dipping sauce.
