To make Creamy Garlic Sauce you need to use the following ingredients:
1 tablespoon unsalted butter
2 teaspoons cooking oil
1 yellow onion, peeled and chopped
2 tablespoons minced garlic
1ΒΌ cup (310 ml) chicken broth
2/3 cup (160 ml) light cooking cream
1 teaspoon cornstarch mixed with 1 tablespoon water
2-3 tablespoons freshly squeezed lemon juice
2 teaspoons dried Italian mixed herbs
2 tablespoons chopped fresh parsley
fresh lemon slices, to serve
Fried Lemon Chicken Scallopini Recipe
Ingredients
- 2 large skinless and boneless chicken breasts,cut into halves gorizontally
- 1 teaspoon garlic powder
- 1 teaspoon salt
- pinch of cracked black pepper
- freshly squeezed juice of half lemon
- 4 tablespoons all-purpose flour
Method
Step 1
Season chicken breasts with garlic powder, salt, and cracked black pepper. Rub lemon juice into each fillet.
Step 2
Add all-purpose flour to a shallow bowl. Dredge chicken fillets in flour, then shake off any excess. Set aside.
Step 3
In a large nonstick skillet, heat butter and oil over medium-high heat. Add chicken breasts and fry until golden on each side. Transfer fried chicken to a warm plate.
Step 4
Add onion and garlic to the skillet and fry, stirring, until onion is translucent. Reduce heat to low and pour in chicken broth. Season broth mixture with salt and black pepper. Continue to cook to reduce down slightly.
Step 5
Stir in light cooking cream and bring sauce to a simmer (for about 5 minutes or until begins to thicken). Stir in cornstarch mixture. Mix well to combine with a sauce.
Step 6
Pour in lemon juice. Simmer for a further 1 minute. Stir in Italian herbs mixture.
Step 7
Return fried chicken to the skillet. Cover with creamy sauce. Garnish with lemon slices and chopped fresh parsley.
