Fried Pineapple Barbecue Chicken Recipe

Makes 6 servings

Ingredients: 1 tablespoon (15 ml)  cooking oil, 6 boneless and skinless chicken thighs, salt and freshly ground black pepper, to taste, 20 oz (600ml) sliced pineapples in their juice,1/2 cup (125 ml) barbecue sauce, 1 jalapeño pepper, thinly sliced (optional), 2 green onions, thinly sliced

Instructions: Preheat a large nonstick skillet over medium heat, then add the cooking oil and heat until bubbling.

Meanwhile, season both sides of the chicken thighs with salt and black pepper. Add seasoned chicken thighs to the hot oil and cook, turning once, until golden brown. Remove cooked chicken from the skillet and transfer to a large serving bowl., keep warm.

Using a colander, drain pineapple preserves, reserving the pineapple juice.

Reduce heat to low, then pour in 1/2 cup (125ml) of reserved pineapple juice, stirring to dissolve all browning bits from the bottom of the skillet. Add the barbecue sauce and stir well. Season with salt and black pepper, to taste. If your sauce is too thick, just add more reserved pineapple juice.

Add cooked chicken thighs together with pineapple slices to the skillet. Dredge both sides of the chicken in the pineapple barbecue sauce. Spoon the remaining sauce over.

Arrange an oven rack so that the skillet will be about 6 inches (15 cm) from the broiler, then turn the broiler on to high. Transfer the skillet to the preheated oven and broil for about 5-7 minutes, or until the barbecue sauce caramelized and the chicken is cooked through.

Remove cooked chicken thighs from the oven and transfer them to serving plates. Pour pineapple-barbecue sauce over. Sprinkle with sliced jalapeño pepper and green onions.

Ingredients

  • 1 tablespoon cooking oil
  • 6 boneless and skinless chicken thighs
  • salt and freshly ground black pepper, to taste
  • 20 oz (600 ml) can sliced pineapples in juice, drained and juice reserved
  • 1/2 cup (125 ml) barbecue sauce
  • 1 jalapeno pepper, thinly sliced
  • 2 green onions, sliced

Method

Step 1

In a large nonstick skillet, heat cooking oil over medium heat. Season chicken thighs with salt and pepper, then add to the skillet and cook until golden brown.

Step 2

Remove fried chicken from the skillet and transfer to a large bowl. Reduce heat to low, then pour in 1/2 cup (125 ml) of reserved pineapple juice. Stir well to dissolve any browned chicken bits from the bottom of the skillet.

Step 3

Add the barnecue sauce and stir well. Season barbecue mixture with salt to taste.

Step 4

Add the cooked chicken and drained pineapple slice to the skillet, dredging both sides in the pineapple barbecue sauce. Spoon the remaining barbecue sauce over the chicken.

Step 5

Placean oven rack so that the skillet will be about 6 inches(15 cm) from the broiler. Turn the broiler to high heat.

Step 6

Transfer the skillet to the oven and broil for 5minutes.

Step 7

Remove baked chicken and sauce from the skillet. Transfer to a serving plate. Sprinkle with sliced jalapeno pepper and green onions. Serve hot.
