Pressure Cooker Chicken and Rice Casserole Recipe
Boneless and skinless chicken thighs with vegetables, Italian sausages, rice, and artichokes cooked in a pressure cooker. Very easy and delicious chicken recipe.
Makes 4-6 servings
Ingredients: 2 tablespoons (30 ml) olive oil, 1/2 pound (240 g) mild Italian sausages, chunked, 6 boneless and skinless chicken thighs, 1 medium yellow onion, peeled and chopped, 2 small green bell peppers,stemmed, cored, seeded, and chopped, 2 teaspoons minced garlic, 1/2 cup (125 ml) rose wine, 28 oz (840 ml) can whole tomatoes, drained and roughly chopped, 1¼ cups 9310 ml) reduced-sodium fat-free chicken broth, 1 cups plus 2 tablespoons long grain white rice, 9 oz (270 ml) box frozen artichoke heart quarters, thawed and drained, 2 teaspoons smoked paprika, 2 teaspoons dried oregano, 1.2 teaspoon salt, 1/2 teaspoon freshly ground black pepper
Instructions: Heat the olive oil in a 6-quart (6L) instant pot turned to the browning function. Add chunked Italian sausages and cook, turning occasionally, until browned, for about 4 minutes. Remove cooked sausages from the pot and transfer to a large bowl. Add the chicken and brown well, turning occasionally, for about 6 minutes. Remove from the pot and transfer to the same bowl.
Add chopped onion and green bell pepper to the pot. Cook, stirring often, until the onion is translucent, for about 4 minutes. Stir in minced garlic and cook until aromatic. Pour in rose wine and bring to a simmer, scraping up the browned bits from the bottom of the pot.
Continue simmering until wine has reduced to a thick glaze, then stir in remaining ingredients. Return cooked sausages and chicken together with any accumulated juices to the pot. Stir well.
Close pressure cooker and lock the lid. Set the machine to cook at high pressure. Set timer to cook for 15 minutes.
Instant Pot Sesame Chicken Thighs Recipe
- 2/3 cup (160 ml) soy sauce
- 1/3 cup granulated sugar
- 1 tablespoon apple cider vinegar
- 1 teaspoon garlic puree
- 1 teaspoon Worcestershire sauce
- 1/2 teaspoon minced garlic
- 1 tablespoon toasted sesame oil
- 2 pound 9960 g) boneless and skinless chicken thighs
- 1 tablespoon cornstarch
In a medium mixing bowl, combine all ingredients, except chicken thighs, sesame oil, and cornstarch. Mix well and set aside
heat sesame oil in an instant pot turned to the browning functions. Add chicken thighs and brown, turning occasionally, just until it turns golden brown.
Add the sauce to browned meat and stir well to coat. Close pressure cooker and lock the lid. Set the machine to cook at high pressure. Set the timer to cook for 8 minutes.
Open pressure cooker, using the Quick Release method. Using tongs, remove cooked chicken from the pot and set aside. Cover with aluminum foil and keep warm.
In a small mixing bowl, combine cornstarch and 1 tablespoon (15 ml) water. Stir well. Set the machine to cook at saute function and stir in cornstarch mixture. Cook, opened, whisking constantly until it thickens. Pour over cooked chicken thighs and serve immediately.
