Ingredients
- For Marinade: 2 tablespoons chili powder
- 1 tablespoon freshly ground turmeric
- freshly squeezed juice of half lemon
- salt and freshly ground black pepper
- For Chicken:1 whole chicken,cut into 10-12 pieces
- 3 inches (7.5 cm) ginger, peeled and chopped
- 1 large bulb garlic, peeled
- 1 cinnamon stick
- 2 stars anise
- 2 large yellow onions, peeled and thinly sliced
- 2 stalks lemongrass, crushed
- 2 tomatoes,cut into cubes
- 2 tablespoons chili powder
- 3tablespoons chili sauce
- 1 cup (250 ml0 fresh coconut milk
- 3 tablespoons plain yogurt
- freshly squeezed juice of half lemon
- zest of 1 lemon
- 1 stalk coriander leaves, chopped
- cooking oil for dip frying
- salt and freshly ground black pepper
Method
Step 1
Clean and drain chicken pieces. In a mixing bowl, combine all marinade ingredients. Mix well, then add chicken pieces, mix again and set aside. Let chicken marinate for 1 hour.
Step 2
In a blender, combine ginger and garlic. Blend until smooth. Set garlic mixture aside.
Step 3
Heat cooking oil in a large wok. Add marinated chicken pieces and fry until golden brown.
Step 4
Remove fried chicken pieces from the wok and transfer into serving platter. Remove cooking oil from the wok, reserving about 2-3 tablespoons of oil. Return wok to the heat. Add in cinnamon stick and anise. Fry until fragrant, then add sliced onions and continue frying until onions are lightly browned. Stir in garlic mixture and crushed lemongrass. Fry, stirring, for about 5 minutes.
Step 5
Add cubed tomatoes and cook until soft. Add chili powder and chili sauce. Continue cooking and, stirring for 5 minutes, then stir in coconut milk. Cook until the mixture comes to a boil. Season to taste with salt and black pepper.
Step 6
Reduce heat to low, add plain yogurt and stir well. Add fried chicken pieces and stir thoroughly to coat. Cook, stirring occasionally, until chicken pieces are tender and gravy reduced (for about 6-8 minutes). Add lemon juice, lemon zest, and chopped coriander leaves. Mix well and transfer fried spicy chicken pieces to a serving platter.
Step 7
Garnish with more coriander leaves and serve.
