Grilled Juniper-Marinated Venison Kebabs Recipe
Makes 6-8 servings
Ingredients: 2 tablespoons juniper berries, or 2 tablespoons gin, 2 tablespoons black peppercorns, 1 teaspoon allspice berries, 2 sprigs fresh rosemary, finely chopped, 3 cloves garlic, peeled and crushed, 3 strips lemon zest, 3 tablespoons freshly squeezed lemon juice, 3 tablespoons dry white wine, 1/4 cup (60 ml) extra-virgin olive oil, 2 yellow onions, peeled, 1ยฝ pounds (720 g) venison, cubed, 4 thick slices bacon, cut into 1-inch (2.5 cm) pieces, coarse salt and freshly ground black pepper, to taste
Instructions: In a large mixing bowl, combine juniper berries, peppercorns, allspice berries, and chopped fresh rosemary. Crush them with the back of a wooden spoon. Stir in crushed garlic, lemon zest, squeezed lemon juice, dry white wine, and olive oil. Mix well and set aside.
Cut each yellow onion into quarters, then half each quarter crosswise. Add a few sliced onions to the marinade. Set remaining onions aside. Add cubed venison to the marinade and stir well to coat. Cover and refrigerate for at least 4 hours.
Remove marinated venison cubes from the refrigerator. Drain in a strainer over a small saucepan. Set heat to high and bring marinade to a boil, until the flavors are concentrated, for about 3 minutes.
Thread marinated venison onto skewers, placing reserved sliced onion and a piece of bacon between the cubed meat. Season venison kebab with salt and black pepper. Heat a charcoal grill. Cook, on the preheated grill, turning occasionally, until the meat is nicely browned.
Once the kebabs have begun to brown, baste them with the boiled marinade. Remove cooked kebabs from the grill and transfer them to the serving platter. Serve at once.

Ingredients
- 1/4 cup (60 ml) plain low-fat yogurt
- 2 tablespoons freshly squeezed lemon juice
- 2 cloves garlic, peeled and minced
- 2 teaspoons minced fresh ginger
- 1/2 teaspoon cayenne pepper
- 1/2 teaspoon ground cardamom
- 1/2 teaspoon ground cumin
- 1/2 teaspoon coriander
- 3/4 pound (360 g) boneless lean sirloin steak, cut into 12 cubes of equal size
- 1 medium-size zucchini, sliced into 12 rounds about 1/2 inch thick each
- 8 cherry tomatoes
- 2 red onions, peeled and quartered
Method
Step 1
In an electric blender or food processor, blend the yogurt, lemon juice, garlic, ginger, paprika, cayenne pepper, cardamom, cumin, and coriander for 10-15 seconds. Place the steak cubes in a bowl, pour in the yogurt mixture, and toss well. Cover and marinate at room temperature for 3 hours or refrigerate overnight, turning once.
Step 2
Preheat the broiler. In a medium-size saucepan, cook the zucchini in unsalted boiling water for 1 min; drain. Remove the beef from the marinade and thread it onto lightly oiled, long metal skewers, along with the zucchini rounds, cherry tomatoes, and onion quarters. Put on the gas or charcoal grill rack and grill 5 inches from the heat for 15-20 min, turning often. When the kebabs are done, transfer them to a warm platter.
