Grilled oysters with spicy tarragon butter. Raw oysters with homemade spicy tarragon butter grilled on a gas grill.Very easy and delicious!

Tarragon and Lemon Butter Recipe

Very delicious butter, perfect for meat, fish, or shellfish. Recipe adapted from https://www.sprinklesandsprouts.com/tarragon-and-lemon-butter/
Ingredients: 2 teaspoons (10 ml) freshly squeezed lemon juice, 1 tablespoon (15 ml) dried tarragon leaves, 1 fresh shallot, freshly ground black pepper, 1/2 cup (125 ml) unsalted butter

Instructions: In a small mixing bowl, combine lemon juice and dried tarragon. Mix, then set aside and allow soaking.ย Place the shallot in a food processor and process well. Using a spatula, push the sides down and then add the remaining ingredients.

Process well until you have a well-combined butter.
Lay a large piece of plastic wrap out on the bench, then spoon lemon-tarragon butter onto the long edge of the prepared cling film. Very carefully roll the plastic wrap around the lemon-tarragon butter. Tie a quick knot in the ends of the cling film, then put it in a refrigerator. Refrigerate for at least 5 hours.

Serve with any cooked meat, fish, or shellfish such as grilled oysters.

Grilled Oysters with Spicy Tarragon Butter

Ingredients

  • 2 sticks unsalted butter, softened
  • 2 tablespoons chopped fresh tarragon
  • 2 tablespoons hot sauce
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 36 medium to large oysters

Method

Step 1

Preheat a gas grill.

Step 2

In an electric blender or food processor, blend the butter, tarragon, hot sauce salt, and pepper. Transfer tarragon mixture to a sheet of plastic wrap. Roll into a 2-inch thick log. Refrigerate for 15-20 minutes.

Step 3

Slice the butter into 36 pieces. Arrange the oysters on the preheated gas or charcoal grill, flight side up. Cover and cook for 5-7 minutes.

Step 4

Transfer grilled oysters to a plate, using tongs. Remove the top shells and loosen the grilled oysters from the bottom shells. Top each oyster with tarragon butter. Return to the grill. Cover and cook until butter is melted (1-2 minutes) Serve grilled oysters immediately.
