Grilled Oysters with Spicy Tarragon Butter2012-08-28

- 2 sticks unsalted butter,softened
- 2 tablespoons chopped fresh tarragon
- 2 tablespoons hot sauce
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 36 medium to large oysters
Preheat a gas grill.
In an electric blender or food processor,blend the butter,tarragon,hot sauce salt and pepper. Transfer tarragon mixture to a sheet of plastic wrap. Roll into 2-inch-thick log. Refrigerate for 15-20 minutes.
Slice the butter into 36 pieces. Arrange the oysters on the preheated gas or charcoal grill,flight side up. Cover and cook for 5-7 minutes.
Transfer grilled oysters to a plate,using tongs. Remove the top shells and loosen the grilled oysters from the bottom shells. Top each grille oyster with tarragon butter. Return to the grill. Cover and cook until butter is melted (1-2 minutes) Serve grilled oysters immediately.
