Ingredients
- 6 boneless swordfish steaks
- 4 tablespoons fresh basil, finely chopped
- 2 lemons (with shaved lemon rind for marinade)
- freshly cracked black pepper
- 5 tablespoons extra virgin olive oil
- freshly squeezed lemon juice
- kosher salt
- For Banana Papaya Salsa:2 ripe bananas, peeled and diced
- 1 papaya, peeled and diced
- 1 red bell pepper, seeded and diced
- 1 green onion, minced
- 1/4 cup (60 g) fresh cilantro, chopped
- 2 tablespoons ginger, minced
- 2 tablespoons freshly squeezed orange juice
- 2 tablespoons freshly squeezed lemon juice
- 2 tablespoons brown sugar
- 2 tablespoons sweet Thai chili sauce
- 1 teaspoon fish sauce
Method
Step 1
In a mixing bowl, combine all fish ingredients, except lemon juice. Mix well and set aside. Allow the fish to marinate for at least 2 hours.
Step 2
Grill marinated swordfish in preheated grill, sprinkling with lemon juice and seasoning with salt, until golden brown. Remove from the grill and serve it with homemade banana papaya salsa.
Step 3
For Banana Papaya Salsa: In a small mixing bowl, combine all salsa ingredients. Mix well and serve over the grilled swordfish.
