Ingredients
- 6 boneless swordfish steaks
- 4 tablespoons fresh basil,finely chopped
- 2 lemons (with shaved lemon rind for marinade)
- freshly cracked black pepper
- 5 tablespoons extra virgin olive oil
- freshly squeezed lemon juice
- kosher salt
- For Banana Papaya Salsa:2 ripe bananas,peeled and diced
- 1 papaya,peeled and diced
- 1 red bell pepper,seeded and diced
- 1 green onion,minced
- 1/4 cup (60 g) fresh cilantro,chopped
- 2 tablespoons ginger,minced
- 2 tablespoons freshly squeezed orange juice
- 2 tablespoons freshly squeezed lemon juice
- 2 tablespoons brown sugar
- 2 tablespoons sweet Thai chili sauce
- 1 teaspoon fish sauce
Method
Step 1
In a mixing bowl,combine all fish ingredients,except lemon juice. Mix well and set aside.Allow fish to marinate for at least 2 hours.
Step 2
Grill marinated swordfish in preheated grill,sprinkling with lemon juice and seasoning with salt, until golden brown. Remove from the grill and serve with homemade banana papaya salsa.
Step 3
For Banana Papaya Salsa: In a small mixing bowl,combine all salsa ingredients. Mix well and serve over grilled swordfish.
