Grilled swordfish with banana papaya salsa. Grilled swordfish with homemade banana papaya salsa. Very delicious! Adapted from http://www.nuggetmarket.com

Ingredients

  • 6 boneless swordfish steaks
  • 4 tablespoons fresh basil, finely chopped
  • 2 lemons (with shaved lemon rind for marinade)
  • freshly cracked black pepper
  • 5 tablespoons extra virgin olive oil
  • freshly squeezed lemon juice
  • kosher salt
  • For Banana Papaya Salsa:2 ripe bananas, peeled and diced
  • 1 papaya, peeled and diced
  • 1 red bell pepper, seeded and diced
  • 1 green onion, minced
  • 1/4 cup (60 g) fresh cilantro, chopped
  • 2 tablespoons ginger, minced
  • 2 tablespoons freshly squeezed orange juice
  • 2 tablespoons freshly squeezed lemon juice
  • 2 tablespoons brown sugar
  • 2 tablespoons sweet Thai chili sauce
  • 1 teaspoon fish sauce

Method

Step 1

In a mixing bowl, combine all fish ingredients, except lemon juice. Mix well and set aside. Allow the fish to marinate for at least 2 hours.

Step 2

Grill marinated swordfish in preheated grill, sprinkling with lemon juice and seasoning with salt, until golden brown. Remove from the grill and serve it with homemade banana papaya salsa.

Step 3

For Banana Papaya Salsa: In a small mixing bowl, combine all salsa ingredients. Mix well and serve over the grilled swordfish.
