Instant Pot Beef Short Ribs Recipe
Ingredients
- 8-10 pieces bone-in beef short ribs
- 6 cloves garlic, peeled and chopped
- 2 small yellow onions, peeled and sliced
- 1/2 cup (125 ml) dry red wine
- 1/2 cup (125 ml) beef broth
- 2 tablespoons balsamic vinegar
- 1 tablespoon brown sugar
- 1 tablespoon soy sauce
- 1 tablespoon fish sauce
- 1 tablespoon olive oil
- 2 bay leaves
- kosher salt and freshly ground black pepper, to taste
- chopped green onions
Method
Step 1
Heat olive oil in an electric instant pot turned to sauté mode. Season one side of ribs with salt and black pepper. Working in batches, brown for 4 minutes on each side (while one side is browned, season the other side with more salt and black pepper)
Step 2
Remove browned beef ribs from the pot, transfer to a serving plate and set aside. Add sliced onions to the pot and cook, stirring occasionally, until soften, for about 3 minutes. Stir in chopped garlic and continue cooking and stirring for a further 30 seconds.
Step 3
Pour in 1/2 cup (125 ml) red wine and deglaze by scraping any browned bits from the bottom of the pot with wooden spoon. Mix the mixture and simmer for about 1 minute allowing some alcohol to evaporate.
Step 4
Add the soy sauce, fish sauce, brown sugar, vinegar, bay leaves, and beef broth. Return beef ribs and their juices. Stir well.
Step 5
Close the pressure cooker and lock the lid. Set the machine to cook at high pressure. Set the timer to cook for 45 minutes.
Step 6
Using the natural Release method, bring pressure to normal. Carefully unlock and open the lid. Discard bay leaves. Using tongs, remove cooked ribs form the pot and transfer to a large plate. Pour liquid over.
Step 7
Sprinkle with chopped green onions. Serve hot.
