Ingredients

  • 2 pounds (960 g) bone-in and skin-on chciken thighs
  • freshly squeezed juice of 1 orange
  • 1 orange, sliced
  • 1tablespoon crushed and sliced ginger
  • 1/4 cup (60 ml) soy sauce
  • 2 tablespoons ketchup
  • 1/2 cup (125 ml) unsalted chicken stock
  • 3 tablespoons honey
  • 6 garlic cloves, peeled and chopped
  • 1/2 teaspoon sesame oil
  • 1 yellow onion, peeled and sliced

Method

Step 1

In an electric instant pot, combine garlic, ginger, onion, soy sauce, sesame oil, ketchup, orange juice, and chicken stock. Mix well. Add chicken thighs skin-side down. Cover the lid and marinate for at least 30 minutes.

Step 2

Flip marinated chicken over, so the chicken skins are facing up. Close the pot and lock the lid. Set the machine to cook at high pressure. Set the timer to cook for 10 minutes.

Step 3

Using the natural Release method, bring pressure to normal. Carefully unlock and open the lid. Using tongs, remove baked chicken thighs from the cooker and transfer them to a large plate.

Step 4

Switch the instant pot to saute mode and bring the marinade to simmer. Add 3 tablespoons of honey to sweeten the sauce. Mix well. Taste the sauce and add soy sauce and salt to taste.

Step 5

Return chicken thighs to the pot and cover with orange sauce.

Step 6

Place chicken thighs on an oven tray under the "Broil" function. Place sliced oranges over the chicken. Broil for a few minutes until oranges and sauce are caramelized. Serve hot.
