Ingredients

  • 1 tablespoon canola oil
  • 1 small yellow onion, peeled and diced
  • 4 cloves garlic, peeled and minced
  • 1 pound Itlaian sausages, case removed
  • 2 cups (500 ml) chicken broth
  • 20 oz (600 g) package frozen cheese tortellini
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 3/4 cup (180 ml) heavy cream
  • 4 oz (120 g) diced cream cheese, softened
  • 1 cup grated Parmesan cheese

Method

Step 1

Heat the canola oil in an electric instant pot turned to saute mode. Add onion and garlic and cook, stirring occasionally, for 3-4 minutes, or until softened. Add sausages and continue cooking and stirring occasionally, for a further 7-10 minutes.

Step 2

Stir in the chicken broth, frozen tortellini, and black pepper. Close the pot and lock the lid. Set the machine to cook at high pressure. Set the timer to cook for 5 minutes.

Step 3

Using the Quick Release method, bring pressure to normal. Carefully unlock and open the lid.

Step 4

Switch the cooker to saute mode. Stir in heavy cream, cream cheese, and grated cheese. Cook until the cheese has been melted. Serve hot.
