Ingredients

  • 2 cups (500 ml) dry red wine
  • 2 cups granulated sugar
  • 1 tablespoon vanilla extract
  • 4-inch (10 cm cinnamon stick
  • 4 firm and ripe Bosc pears, peeled, halved, and cored
  • 2-inch (5 cm) long strips of orange peels

Method

Step 1

In a 6-quart (6 L) electric pressure cooker turned to the browning function, combine dry red wine, sugar, vanilla, orange peels, and cinnamon stick. Mix well, then bring to a simmer, stirring occasionally, particularly until the sugar dissolves.

Step 2

Add halved pears and stir well to completely coat with the spicy mixture.

Step 3

Set the machine to cook at high pressure. Set the time to cook for 6 minutes.

Step 4

Using the Quick Release method, bring pressure to normal. Carefully unlock and open the pot. Using a slotted spoon, remove poached pears and transfer them to a large sealable bowl. Set aside and allow cooling.
