Oven baked banana birthday cake recipe. Very easy and delicious cake baked in halogen (turbo) oven.

Points for Successful Cake Making

Creaming Method

  • Cream the butter and sugar until light, white, and fluffy.
  • Use fine granulated sugar for a fine-textured cake.
  • Beat eggs just until smooth. If over beaten until frothy, the eggs will become watery.
  • Add beaten eggs gradually, beating well after each addition. Sift flour, salt, and raising agent together. Fold this gently into the creamed mixture alternately with the milk until thoroughly mixed.
  • Stir in any flavorings and fruit alternately with the flour.
  • The final consistency should be a soft dropping consistency. Add more liquid if necessary.

This method is used for butter cakes, small cakes, and rich fruit cakes.

Whipped Sponge Method

  • Use a spotlessly clean mixing bowl.
  • Use fine granulated sugar for a fine-textured cake.
  • Sift flour and any other dry ingredients together three times.

Method One

  • Whip whole eggs with sugar until the mixture is pale lemon colored and thick enough to support its own trail.
  • Sift the flour into the mixture and mix with a metal spoon or plastic spatula using a gentle “cut-and-fold” action.

Note: If you do not have an electric mixer, use a rotatory beater and beat the eggs and sugar over hot water.

Method Two

  • Separate the eggs carefully, making sure there are no specks of yolk in the egg white.
  • Beat the egg white until stiff.
  • Add sugar gradually, whisking continuously until thick and shiny.
  • Beat the egg yolks quickly.
  • Sift the flour into the mixture and mix with a metal spoon or a plastic spatula, using a gentle “cut-and-fold” action.

The two variation on this method are used for sponge cakes, jelly rolls, and sponge drops.

Oven Baked Banana Birthday Cake Recipe

Ingredients

  • 3²⁄³ oz (110 g) butter
  • 3²⁄³ oz (110 g) sugar
  • 1 egg,beaten
  • 3 ripe bananas,mashed
  • 1/2 teaspoon bicarbonate of soda
  • 2 tablespoons milk
  • 7¹⁄³ oz (220 g) self-raising flour

Method

Step 1

In a mixing bowl, combine butter and sugar. Cream until fluffy.

Step 2

Add to butter mixture the beaten egg and mashed bananas. Mix well.

Step 3

In another mixing bowl, combine bicarbonate of soda and milk. Mix until dissolved and add to banana mixture.

Step 4

Fold in the sifted flour until thoroughly combined. Set turbo oven temperature to 356°F (180°C).

Step 5

Grease baking sheet with cooking spray. Place mixture in greased baking sheet and bake on low grilling rack for 25-30 minutes. Leave oven baked banana cake to cool in the baking sheet before turning out onto a cooling rack.
