Oven Baked Blueberry Muffins

Ingredients

  • 2/3 cup (180 g) granulated sugar
  • 2 large eggs, beaten
  • 1 cup (250 ml) natural yogurt
  • 1 teaspoon vanilla extract
  • 10 oz (300 g) self-raising flour
  • 2/3 cup (180 g) fresh blueberries

Method

Step 1

Preheat turbo oven to 380 F (190 C).

Step 2

In a mixing bowl, combine beaten eggs and sugar. Beat until fluffy. Add yogurt and vanilla extract and beat again.

Step 3

Add self-raising flour into the egg mixture and carefully fold into the mix. Add fresh blueberries.

Step 4

Place batter in cupcake or muffin cases and place on low rack of turbo oven. Bake for 15-18 minutes or until toothpick inserted in the center comes out clean.

Step 5

Remove baked blueberry muffins from halogen oven and place on cooling rack. Cool for 5-10 minutes.
