Instant Pot Butter Chicken Recipe
Makes 4-6 servings
Ingredients: 4 tablespoons (60 ml) unsalted butter, divided, 1 large yellow onion, peeled and coarsely chopped, 3 cloves garlic, peeled and coarsely chopped, 2-inch (5 cm) knob fresh ginger, peeled and coarsely chopped, 1 tablespoon (15 ml) garam masala, 1 teaspoon (5 ml) each: ground fresh coriander, turmeric, kosher salt, 28 oz (840 ml) can diced tomatoes, undrained, 2 pounds (960 g) boneless and skinless chicken breasts, 1/2 cup (125 ml) heavy (double) cream, cooked rice
Instructions: Melt 2 tablespoons butter in 6-quart 96 L) electric pressure cooker turned to saute functions. Add chopped onion, garlic, and ginger, and saute, stirring continuously, until onion lightly browned, for about 4 minutes. Stir in the garam masala, ground coriander, turmeric, and salt. Cook for a further 1 minute.
Add chicken breasts and tomatoes with their juices to the pot, making sure chicken breasts covered by sauce. Close pressure cooker and lock the lid. set burner heat to high pressure. When cooker reaches high pressure, reduce heat to low. Set timer to cook for 10 minutes.
Open the pressure cooker, using the Natural Release method. using tongs, remove cooker chicken breasts from the pot and transfer to a cutting board. Allow cooling completely.
Add remaining 2 tablespoons butter and heavy cream to the pot. Using an immersion blender, blend the sauce until smooth.
Cut cooled chicken into 1-inch (2.5 cm) pieces, then return to the butter sauce. Stir well to combine.
Transfer butter chicken to a serving plate. Serve over cooked rice.
Oven Baked Butter Chicken Recipe
- 4 boneless and skinless chicken breasts
- 2 large eggs, lightly beaten
- 1 cup (250 ml) Ritz crackers, crushed
- 1/2 cup (125 ml) unsalted butter, cut into small pieces
- 1/2 teaspoon garlic salt
- freshly ground black pepper, to taste
Preheat the oven to 375 F (180 C).
Place a few pieces unsalted butter in a 9x13-inch (21.5x31.5 cm) pan and melt in preheated oven. Spread melted butter around of the bottom of pan.
In a medium mixing bowl, combine crushed Ritz crackers, garlic salt, and black pepper. Mix well.
Place beaten eggs in anoter small bowl. Deap each chicken breast in the beaten egg, then in the cracker mixture, making sure chicken breasts coated completely with it.
Arrange seasoned breasts in the pan. Top with remaining butter. Bake in preheated oven for 35-40 minutes.
