Chicken Breasts Poached in Basque Broth Recipe
For an innovative touch, use a leek instead of green and red peppers.
Makes 4 servings
Ingredients: 1 tablespoon (15 ml) unsalted butter, 1 yellow onion, peeled and finely chopped, 1 green bell pepper, seeded and finely chopped, 1 garlic clove, peeled and minced, 2 cups (500 ml) reduced-sodium fat-free chicken stock, 4 boneless and skinless chicken breasts, a pinch of fresh thyme, 1 bay leaf, salt and freshly ground black pepper, 2 teaspoons chopped fresh parsley
Instructions: In a medium-size saucepan, melt butter over medium-high heat. Add onion and peppers, cover, reduce heat to low, and simmer without browning. Stir in minced garlic. Pour in the chicken stock. Place the chicken breasts in the saucepan, then increase heat to medium-high and bring to a boil.
Add chopped fresh thyme and bay leaf. Season with salt and black pepper. Stir well. Cover, then reduce heat to low and cook for about 20 minutes.
When chicken breasts are cooked through, arrange them on a serving plate. Top each portion with cooked green bell peppers and onions. Ladle chicken stock over the chicken, sprinkle with chopped fresh parsley, and serve immediately.
Oven-Baked Cajun Chicken Breasts Recipe
- 4 boneless and skinless chicken breasts
- 1 teaspoon paprika
- 1/2 teaspoon onion powder
- 1/4 teaspoon freshly ground black pepper
- 1/8 teaspoon white pepper
- 1/8 teaspoon garlic powder
- 1 teaspoon dried summer savory spice
- 1/2 teaspoon salt-free herb seasoning
- 2 tablespoons sonflower oil
Preheat oven to 375° F(190°C). Arrange chicken breasts on an ungreased baking sheet.
In a small mixing bowl, combine seasoning. Mix well.
Brush chicken breasts with oil and sprinkle with seasonings. Bake in preheated oven for 30 minutes. Turn. Bake 15-20 minutes until chicken breasts are golden.
