Oven-Baked Cauliflower Gratin Recipe
Ingredients
- 3-pound (1.44 kg) head cauliflower, cut into florets, cooked and drained
- 4 tablespoons (60 ml) unsalted butter, divided
- 3 tablespoons all-purpose flour
- 2 cups (500 ml) hot milk
- 1/2 teaspoon freshly ground black pepper
- 1/4 teaspoon grated nutmeg
- 3/4 cup grated Gruyere cheese
- 1/2 cup grated Parmesan
- 1/2 cup breadcrumbs
- kosher salt
Method
Step 1
Preheat your oven to 375 F (190 C).
Step 2
In a medium saucepan, melt 2 tablespoons (30 ml) unsalted butter over low heat. Add all-purpose flour. Using a wooden spoon, stir constantly for 2 minutes.
Step 3
Pour the hot milk into the flour mixture, stirring until it comes to a boil. Boil, whisking continuously, for a further 1 minute or until thickened.
Step 4
Turn off the heat. Season the mixture with 1 teaspoon salt and black pepper. Add ground nutmeg, 1/2 cup of Gruyere cheese, and grated Parmesan.
Step 5
Pour 1/3 of the cheese mixture on the bottom of baking sheet. Top with cooked and drained cauliflower florets. Spread the remaining sauce over cauliflower.
Step 6
In a small mixing bowl, combine breadcrumbs with the remaining Gruyere cheese. Stir well and sprinkle on the top.
Step 7
In the same saucepan, melt the remaining butter over medium heat. Drizzle over the gratin.
Step 8
Bake in the preheated oven for 25-30 minutes. Serve hot.
