Oven Baked Chicken Breasts with Mustard Sauce

- 4 skinless and boneless chicken breasts,halved horizontally
- 1 tablespoon olive oil
- 3 tablespoons cream cheese
- 2 tablespoons Dijon mustard
- 2 teaspoons chives
- sea salt and freshly ground black pepper
Place halved chicken breasts on a sheet of greaseproof paper. Rub chicken with olive oil.
In a mixing bowl,combine cream cheese,Dijon mustard and chives. Mix well and season to taste with salt and black pepper. Evenly spread mustard mixture over chicken breasts. Place on greased baking sheet.
Preheat halogen oven to 400 F (200 C). Place baking sheet on high rack of turbo oven. Bake in preheated oven for 15-20 minutes or until cooked and golden.
Remove baked chicken breasts with mustard sauce from halogen oven. Serve with mashed potatoes.
