Garlic Butter Sauce Recipe
This sauce is used on steaks, for barbecue, shrimp scampi, garlic bread, and to prepare snails.
Ingredients: 1 cup (250 ml) unsalted butter at room temperature, 1/2 cup (125 ml) Garlic Butter, at room temperature2 tablespoons 930 ml) chopped fresh parsley, 1 teaspoon (5 ml) chervil, 4-5 garlic cloves, peeled, crushed, and finely chopped, salt and freshly ground black pepper, to taste,1 tablespoon finely chopped dry shallot, freshly squeezed juice of 1/4 lemon
Instructions: In a large mixing bowl, combine all ingredients. Blend well. Adjust seasoning, if necessary.To store, roll in aluminum foil. Refrigerate until ready to use. This sauce will keep frozen for 3 months.
Shrimp Butter Recipe
Another butter, which you can use for scampi shrimp, smoked salmon, and lobster.
Ingredients: 4 oz (120 g) cooked shrimp, peeled and deveined, 1 cup 9250 ml) unsalted butter, at room temperature, salt and freshly ground black pepper, freshly squeezed juice of 1/4 lemon, 1 tablespoon (15 ml) each: finely chopped dry shallot, finely chopped fresh parsley
Instructions: Puree shrimp in a mixing bowl, then stir in all remaining ingredients. Rool in aluminum foil and refrigerate until ready to use. This butter you can keep frozen for 3 months.
Oven Baked Easy Shrimp Scampi Recipe
Ingredients
- 32 shrimp scampi, washed, devined and batterflied
- salt and freshly ground black pepper, to taste
- freshly squeezed juice of 1 lemon
- 1/2 cup (125 ml) garlic butter, at room temperature
- 1/2 cup (125 ml) breadcrumbs
Method
Step 1
Set shrimp scampi, flat, on a buttered baking sheet. Sprinkle with salt and black pepper. Add lemon juice and dab 1/2 teaspoon (3 ml) garlic butter on each. Sprinkle with breadcrumbs.
Step 2
Preheat the oven to 400 F (200 C). Bake in preheated oven, 6 inches (15 cm) away from the top elememnt for 8-10 minutes.
Step 3
Turn off the oven and remove baked shrimp scampi from it. transfer to serving plates. Garnish with lemon wedges. serve hot.
