Oven Baked Garlic-Parmesan Chicken


  • 2 tablespoons extra virgin olive oil
  • 1-2 garlic cloves, peeled and minced
  • 1 cup (250 g) dry breadcrumbs
  • 2/3 cup (160 g) grated Parmesan cheese
  • 1 teaspoon dried basil
  • 1/4 teaspoon freshly ground black pepper,plus extra for seasoning the chicken
  • 6 chicken breasts, boned, skinned, and cut into halves
  • salt to taste


Step 1

Preheat your oven to 350 F (175 C). Lightly grease a 9 x 13-inch baking sheet with nonstick cooking spray.

Step 2

In a shallow mixing bowl, combine olive oil and minced garlic. Mix well and set aside.

Step 3

In another mixing bowl, combine bread crumbs, grated Parmesan cheese, basil, and 1/4 teaspoon black pepper. Stir well.

Step 4

Season chicken halves with salt and black pepper. Dip in oil mixture, then in bread crumb mixture. Place coated chicken breast in the greased baking sheet and top with reaming bread crumb mixture.

Step 5

Bake in preheated oven for 30 minutes or until chicken golden and juices run clear.
