Oven Baked Goat’s Cheese Salad

- 3/4 pound (300 g) goat's cheese with rind
- 6 tablespoons olive oil
- 3 tablespoons white wine vinegar
- 1½ teaspoons wholegrain mustard
- 1 teaspoon honey
- 3 oz (90 g) mixed salad leaves
- 2 oz (60 g) walnut halves,coarsely chopped
- 10-12 small basil leaves
- crusty bread,to serve
Slightly grease with cooking spray the round baking tray. Put the cheese slices,spaced well,on a round baking tray.
In a mixing bowl,combine olive oil,vinegar,mustard and honey. Mix well.
Arrange the salad leaves on four serving plates.
Put the top rack in the turbo oven. Place the baking tray with cheese on it. Cover turbo oven and cook for 3-6 minutes,until cheese is soft and golden.
Remove oven baked goat's cheese from the halogen oven. Carefully lift the cheese with a spatula onto the salad leaves. Sprinkle over chopped walnuts and basil leaves. Drizzle oven baked goat's cheese with dressing mixture. Serve salad with crusty bread.
