Oven-Baked Parmesan Chicken Wings Recipe
- 3 quarts (3 L) cold water
- 1/3 cup (80 ml) balsamic vinegar
- 1/4 cup salt
- 1 bay leaf
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1 teaspoon dried rosemary
- 8 cloves garlic, peeled and minced
- pinch of salt
- 3 tablespoons olive oil
- 1 tablespoon frshly ground black pepper
- 2 teaspoons red pepper flakes
- 4 pounds (1.9 kg) chicken wings, separated
- 2 tablespoons fine breadcrumbs
- 1 cup finely grated Parmesan cheese, divided
Preheat your oven to 450º F (225º C). Line a baking sheet with aluminum foil, then grease with nonstick cooking spray.
In a large pot, combine the water, balsamic vinegar, 1/4 cup salt, bay leaf, thyme, oregano, and rosemary. Stir well, then bring to a boil over medium-high heat.
Add chicken wings, then return to a boil. Cook, uncovered, for 15 minutes.
Using a slotted spoon, remove boiled wings from the pot. Set aside and allow to dry for 15 minutes.
Meanwhile, In a mortar, combine minced garlic and a pinch of salt. Using a pestle, mash until smooth.
In a large mixing bowl, combine mashed garlic mixture, olive oil, black pepper, and red pepper flakes. Add boiled chicken wings and breadcrumbs. Toss well to coat wings completely. Sprinkle with 1/2 cup grated Parmesan cheese.
Transfer to greased baking sheet, then sprinkle with remaining Parmesan cheese. Bake in preheated oven until wings are nicely browned, for 20-25 minutes.
