Oven baked trout with almonds. This is really easy and simple recipe. Trout with almonds and lemon juice baked in a halogen (turbo) oven. You may also like Baked Trout with Creamy Sauce

Oven Baked Trout with Almonds

Ingredients

  • 4 small trout fillets
  • olive oil
  • 3 oz (60 g) unsalted butter
  • freshly squeezed juice and zest of 1 large lemon
  • 3 oz (90 g) flaked almonds
  • freshly gound black pepper

Method

Step 1

Rub the trout with olive oil and season with black pepper. Place each of fish on its own sheet of aluminum foil, big enough to parcel up.

Step 2

Spray each baking sheet with olive oil. Place the fish in the center of the aluminum foil and fold up the sides to form a bowl shape, secure enough to hold melted butter.

Step 3

In a large saucepan, melt butter over medium heat. Add the lemon juice, zest, and almonds and warm for 1-2 minutes, stirring occasionally. Remove butter mixture from the heat and pour over each trout fillet, ensuring they are evenly covered. Secure the foil parcels well.

Step 4

Preheat turbo oven to 374° F(190° C). Place the fish on the high grilling rack and cook for 20-30 minutes (depends on the size of the fish). Remove cooked trout from the parcels and serve, pouring any excess juice back over fish. Serve oven baked trout with almonds and vegetables.
