Oven baked turkey legs with prunes. Turkey legs baked in an oven and served with prunes and pine nuts. You may also like Baked Parmesan Chicken Wings, another yummy recipe baked in an oven.
Oven Baked Turkey Legs with Prunes
Ingredients
- 2 whole turkey legs
- 2 cups (500ml) prune juice
- 2 tablespoons olive oil
- 1 cup (250 ml) chicken stock
- 24 prunes,washed and pitted
- 1 teaspoon pink peppercorns
Method
Step 1
Preheat oven to 350°F(180°C).
Step 2
In a bowl,combine turkey legs and prune juice. Soak for 15 minutes. Drain,reserving prune juice.
Step 3
In a nonstick skillet,heat vegetable oil,add turkey legs and sear. Season with salt and black pepper and place in preheated oven. Cook in oven for 45-50 minutes.
Step 4
Meanwhile,in a large saucepan,combine the chicken stock and reserved prune juice. Mix well and bring to a boil.Set mixture aside.
Step 5
Fifteen minutes into cooking process,baste turkey with half the cooking juice. Repeat 15 minutes later. When done,carve turkey legs and coat with cooking juice. Garnish with prunes and pink peppercorns. Sprinkle with pine nuts.
