Oven Baked Vanilla Cake with Pears
Ingredients
- For the Batter: 6 oz (180 g) unsalted butter at room temperature
- 6¹⁄³ oz (190 g) granulated sugar
- 3 large eggs
- 1/2 teaspoon vanilla extract
- 6¹⁄³ oz (190 g) all-purpose flour
- 1 teaspoon baking powder
- 3¹⁄³ oz (40 ml) milk
- For the Pears:8 pears, peeled
- 4 cups (1 L) water
- 1½ cups granulated sugar
- freshly squeezed juice and zest of half lemon
- 1 cinnamon stick
Method
Step 1
In a large saucepan, combine 4 cups of water,1½ cups granulated sugar, lemon juice, lemon zest, and cinnamon. Over medium-high heat bring to boil, stirring until sugar is dissolved.
Step 2
Slice off the bottom of each peeled pear so that it stands upright and remove the seeds. Arrange peeled pears in a saucepan and bring to a boil. Reduce heat to medium and simmer, turning occasionally, until pears are soft (for about 10 minutes). Transfer cooked pears to a plate.
Step 3
Preheat your oven to 330F (165C). Grease 6-inch (18 cm) round cake pan and 4 molds with nonstick cooking spray.
Step 4
In a bowl, combine sugar and butter. Using electric mixer, beat them on medium speed until light and fluffy (for about 5 minutes). Add the eggs, one at a time, beating well after each addition. Add vanilla extract and stir well.
Step 5
In a mixing bowl, combine all-purpose flour and baking powder. Combine well. Reduce speed of electric mixer to low. Add half of flour mixture to butter mixture in a few additions. Add milk, then remaining half of flour mixture. Beat for a further 2-3 minutes.
Step 6
Pour the batter into cake pan and the molds. Push in cooked pears until they reach the bottom. Bake in preheated oven for about 1 hour 25 minutes, or until toothpick inserted in the center comes out clean.
