Oven grilled lobster with Parmesan sauce.Lobsters with Parmesan,dry white wine and bread crumbs grilled in oven.Very delicious!!!

Ingredients

  • 2 oz(60 g) melted butter
  • 1/4 cup(60 g) plain flour
  • 1/4 cup(60 ml) dry white wine
  • pinch of saffron threads
  • 2 cups(500 ml) milk
  • 3/4 cup(180 g) grated Parmesan
  • 2 frozen cooked lobster,thawed, halved lengthways, shells reserved and meat coarsely chopped
  • 1 tablespoon olive oil
  • 1 cup fine bread crumbs
  • 2 teaspoons fresh thyme leaves

Method

Step 1

In a medium saucepan,combine melted butter and flour. Cook ,stirring with a wooden spoon,until bubbles.

Step 2

Remove from the heat. Add dry white wine and whisk well.

Step 3

Add saffron and milk. Whisk constantly until smooth and well combined. Cook,stirring, over medium-high heat until sauce thickens.

Step 4

Stir in 1/2 cup of grated Parmesan cheese and continue cooking until cheese is melted.

Step 5

Remove from the heat and season with salt and black pepper. Set aside and let cool completely. Stir in lobster meat.

Step 6

In a frying pan,preheat olive oil over medium heat. add bread crumbs and thyme. Cook,stirring occasionally,for 5 minutes.

Step 7

Preheat grill to high. Put reserved lobster shells,cut side up,on a baking tray. Spoon lobster mixture evenly among the shells. Cook under grill,about 2-inches(5cm) from the heat,until golden brown.

Step 8

Sprinkle over thyme mixture. Serve hot.
