Oven grilled stuffed chicken breasts.Chicken breasts stuffed with mozzarella cheese,pepperoni and red bell pepper cooked in oven.
- 4 boneless chicken breasts
- 1 clove garlic,peeled and halved
- kosher salt and black pepper
- 1 tablespoon extra-virgin olive oil
- 3/4 cup shredded mozzarella cheese
- 1/4 cup (60 ml) bottles roasted red pepper strips(optional)
- 8-12 slices pepperoni
Preheat the oven to 350 degrees F (175 C).
Place chicken breasts skin side up on a work surface and rub all sides with cut garlic clove. Using a sharp knife>make a pocket in each chicken breasts. Season all sides with salt and black pepper.
In a large nonstick skillet,heat 1 teaspoon olive oil over medium-high heat. Add chicken breasts skin side down and cook until golden brown for 4-5 minutes on each side. Turn off the heat and let chicken to cool a few minutes.
Stuff each chicken breast with 2-3 teaspoon shredded mozzarella cheese. Place several pepper strips and 2 to 3 slices pepperoni. Transfer stuffed chicken breasts to preheated oven.
Bake until chicken cooked through and cheese is melted. Increase heat to 450 F (225 C). Bake for a further 5 minutes. Remove baked chicken breasts from the oven. Transfer to serving platter. Serve immediately.
