Instructions: Pour 3 cups (750 ml) of water in a medium saucepan, cover and bring to a boil over high heat. When boiled, uncover and slowly stir in the grits, 1 tablespoon (15 ml) salt and 1/2 teaspoon (3 ml) black pepper. Remove the saucepan from the heat, season to taste with salt and black pepper, cover and set aside. Keep warm.

Meanwhile, in a large mixing bowl, place the shrimp and season with salt and black pepper. In a large nonstick skillet, melt the remaining 2 tablespoons (30 ml) unsalted butter over medium-high heat. Add seasoned shrimp, minced garlic, and cayenne pepper. Cook, tossing, until the shrimp are pink, for about 3-4 minutes.

Remove the skillet from the heat. Add 2 tablespoons (30 ml) water, freshly squeezed lemon juice, and chopped fresh parsley. Stir well to coat cooked shrimp with the sauce, then season with more salt and black pepper.
