Ingredients
- 1/2 cup flat-leaf Italian parsley
- 1/4 cup pimento
- 10 small pimento-stuffed black olives
- 3/4 oz (28 g) Grated Parmesan cheese
- 1/2 oz (15g) pignolias (pine nuts) toasted
- 2 teaspoons olive oil
- 1 teaspoon balsamic vinegar
- 1 small garlic clove, peeled
- 3 cups cooked macaroni
Method
Step 1
In a food processor combine all ingredients, except macaroni. Process until puréed, scraping down sides of work bowl as necessary.
Step 2
Arrange macaroni in a serving bowl. Add pesto and toss well to coat.
