Ingredients
- 6 firm pears, peeled and cored, stem left intact
- 3/4 pint (400 ml) freshly squeezed lemon juice
- 1 tablespoon caster sugar
- 4 oz (120 g) vanilla pod
- 1 plain dessert chocolate, cut into small pieces
- 3½ oz (110 g) butter
- 1/2 oz (15 g) ice cream (optional)
Method
Step 1
Combine water, lemon juice, sugar, and vanilla pod in a saucepan. Mix and heat gently until the sugar dissolves.
Step 2
Bring mixture to a boil, add pears and simmer for 15 minutes. Leave pears to cool in the syrup, then remove them, using a draining spoon and chill 1-2 hours. Reserve the syrup.
Step 3
In a heatproof bowl, combine chocolate and butter. Stand the bowl over the pan of simmering water and stir until melted. Remove from the heat and stir in 2 tablespoons of pear syrup.
Step 4
Arrange the pears in a serving dish and place scoops of ice cream(optional). Spoon the chocolate sauce over the pears. Serve pears in chocolate sauce cold.
