Pressure Cooker Chicken Drumsticks in Creamy Tomato Sauce
The fennel seeds will give the dish unbelievable flavor.
Makes 4-6 servings
Ingredients: 2 tablespoons (30 ml) unsalted butter, 8 skin-on chicken drumsticks, 1 large yellow onion, peeled, halved, and sliced, 1 teaspoon (7 ml) dried thyme, 1 teaspoon (7 ml) fennel seeds, 1/2 teaspoon (3.5 ml) salt, 1/2 teaspoon (3.5 ml) freshly ground black pepper, 14 oz (420 ml) can crushed tomatoes, 1/4 cup (60 ml) chicken broth, 1/4 cup (60 ml) heavy cream
Instructions: In a 6-quart stove top pressure cooker, heat butter over medium heat. Add half of the chicken drumsticks. Brown well, turning occasionally, for about 5 minutes. Remove cooked drumsticks from the pressure cooker and transfer to a large bowl. Repeat with the remaining chicken drumsticks.
Add the onion and cook, stirring occasionally, until softened, for about 4 minutes. Stir in dried thyme, fennel seeds, and seasoning. Cook for a further 20 seconds, or until aromatic. Pour in canned tomatoes and chicken broth, then nestle chicken drumsticks into the sauce, pouring any accumulated juices from their bowl into the cooker.
Close the pressure cooker and lock the lid. Set burner heat to high pressure. When the cooker reaches high pressure, reduce heat to low. Set the timer to cook for 10 minutes. Open the pressure cooker, using the Natural Release method. Unlock and open the pot. Stir in heavy cream and simmer for 1 minute.
Using tongs, remove baked drumsticks from the pressure cooker and transfer them to a serving plate. Pour creamy tomato sauce over. Serve immediately. Need more pressure cooker recipes?

Ingredients
- 3 pounds (1.44 kg) skinless chicken drumsticks
- 1/2 teaspoon freshly ground black pepper
- 8 bacon slices
- 1 tablespoon fresh rosemary leaves
- 2 teaspoons minced garlic
- 1 tablespoon balsamic vinegar
- 1/2 cup (125 ml) chicken broth
Method
Step 1
Season chicken drumsticks with salt and black pepper. Wrap a strip of bacon around each drumstick.
Step 2
Place half of the wrapped drumsticks in a pressure cooker tuned to the browning function. Brown, turning occasionally, for about 5 minutes. Transfer to a large bowl and repeat with the remaining drumsticks.
Step 3
Return browned drumsticks to the pressure cooker. Sprinkle with fresh rosemary and minced garlic. Drizzle with vinegar. Pour chicken broth around the legs.
Step 4
Close the pressure cooker and lock the lid. Set the machine to cook at high pressure. Set the timer to cook for 14 minutes.
Step 5
Open the pressure cooker, using the Normal Release method. Unlock and open the pot. Transfer cooked drumsticks to serving plates. Serve hot.
