Pressure Cooker Pork Chops with Buttery Apples Recipe

Makes 4 servings

Ingredients: 3 tablespoons (45 ml) unsalted butter, 4 bone-in pork loin chops, 1/2 teaspoon (3 ml) each: ground allspice, salt, freshly ground black pepper, 1 cup (250 ml) frozen pearl onions, thawed, 2 large green apples, peeled, cored, and each cut into 6 wedges, 4 fresh thyme sprigs, 3/4 cup (180 ml) reduced-sodium fat-free chicken broth

Instructions: In a 6-quart (6 L) electric pressure cooker, turned to the browning mode, melt 1 tablespoon (15 ml) butter. Sprinkle pork chops with ground allspice, salt, and black pepper. Working in batches, brown meat in hot butter, turning once, for about 4 minutes.

Remove cooked pork chops from the pot and transfer to a plate. Melt 1 more tablespoon (15 ml) butter in the pressure cooker, and repeat with remaining chops.

Melt the remaining 1 tablespoon (15 ml) butter in the pot. Add pearl onions and cook, stirring, until lightly browned, for about 3 minutes. Add apple wedges and fresh thyme sprigs, then pour in chicken broth. Nestle browned pork chops among the apple wedges and onions. Pour any accumulated juices from the plate into the pot.

Close pressure cooker and lock the lid. Set machine to cook at high pressure. Set timer to cook for 10 minutes.

Open the pressure cooker, using the Quick Release method. Using tongs, transfer cooked chops to serving plates. Spoon the apples and cooked pearl onions over the chops. Discard the thyme sprigs.

Pressure Cooker Baked Pork Chops Recipe

Ingredients

  • 4 pork loin chops, 1/2-inch (2.5 cm) thick
  • 1 cup (250 ml) long grain white rice, uncooked
  • 4-6 stalks fresh celery, sliced
  • 1¾ cups (430 ml) reduced-sodium fat-free chicken broth
  • kosher salt, freshly ground black pepper, red peperflakes, to taste
  • olive oil

Method

Step 1

In a 6-quart (6 L) electric pressure cooker turned into browned functions, heat olive oil.

Step 2

Season pork chops with salt, black pepper, and red pepper flakes. Add seasoned pork chops to the pot and brown on one side only.

Step 3

Remove browned meat from the pot and transfer to a serving plate.

Step 4

Add uncooked rice to the pot. Pour in chicken broth. Stri well, scrapping any browned bits form the bottom of the pot. Place celery on the top, then put pork chops.

Step 5

Close pressure cooker and lock the lid. Set machine to cook at high pressure. Set timer to cook for 5 minutes.

Step 6

Open pressure cooker, using Quick Release method. Using tonsg, transfer cooked pork chops to serving plates. Serve hot.
