Pressure Cooker Baked Sweet Potatoes Recipe
Ingredients
- 2-4 medium sweet potatoes
- crumbled feta cheese
- chopped green onions
Method
Step 1
Scrub potatoes, then prick 5-10 times with a fork.
Step 2
Pour 1 cup (250 ml) water into a 6-quart (6 L) electric pressure cooker. Add a trivet and arrange crumbled potatoes on it.
Step 3
Close and lock the lid. Set the machine to cook at high pressure. Set the timer to cook for 30 minutes.
Step 4
Using the natural Release method, bring pressure to normal. Carefully unlock and open the lid. (please note: If for some reason your potatoes are not fully cooked through, place the lid back on the Instant Pot and cook for a further 5-10 minutes)
Step 5
Using tongs, remove cooked potatoes from the pot and transfer them to serving plates. Top each potato with crumbled feta cheese and sprinkle with chopped green onions.
