- 4 tablespoons unsalted butter,chunked
- 6 cups broccoli florets
- 1 teaspoon salt
- 1/2 teaspoon baking soda
- 3 cups (750 ml) chicken broth
- 2 tablespoons fresh basil leaves
- 1/2 cup finely grated Cheddar cheese
- 1/4 cup (60 ml) heavy cream
In a pressure cooker,melt butter over medium heat. Stir in broccoli florets,salt and soda mixture (baking soda with 1/2 cup (125 ml) water).
Close pressure cooker and lock the lid. Set burner heat to high pressure. When cooker reaches high pressure,reduce heat to low. Set timer to cook for 15 minutes.
Open pressure cooker,using Quick Release method. Stir in chicken broth and basil.
Using an immersion blender,puree cheesy soup right in pressure cooker.
Stir in Cheddar cheese and heavy cream. Bring to simmer,stirring, over medium heat. Cook,stirring,for a further 1 minute.
Turn off pressure cooker. Ladle soup into soup bowls. Serve hot.
