Pressure Cooker Broccoli Cheddar Soup

Ingredients
- 4 tablespoons unsalted butter, chunked
- 6 cups broccoli florets
- 1 teaspoon salt
- 1/2 teaspoon baking soda
- 3 cups (750 ml) chicken broth
- 2 tablespoons fresh basil leaves
- 1/2 cup finely grated Cheddar cheese
- 1/4 cup (60 ml) heavy cream
Method
Step 1
In a pressure cooker, melt butter over medium heat. Stir in broccoli florets, salt, and soda mixture (baking soda with 1/2 cup (125 ml) water).
Step 2
Close pressure cooker and lock the lid. Set the machine to cook at high pressure. Set timer to cook for 18 minutes.
Step 3
Open pressure cooker, using Quick Release method. Stir in chicken broth and basil.
Step 4
Using an immersion blender, purée cheesy soup right in pressure cooker.
Step 5
Stir in Cheddar cheese and heavy cream. Switch the pot to the sauté mode. Brine to a simmer. Cook, stirring, for a further 1 minute.
Step 6
Turn off pressure cooker. Ladle soup into soup bowls. Serve hot.
