  • 4 tablespoons unsalted butter, chunked
  • 6 cups broccoli florets
  • 1 teaspoon salt
  • 1/2 teaspoon baking soda
  • 3 cups (750 ml) chicken broth
  • 2 tablespoons fresh basil leaves
  • 1/2 cup finely grated Cheddar cheese
  • 1/4 cup (60 ml) heavy cream

Method

Step 1

In a pressure cooker, melt butter over medium heat. Stir in broccoli florets, salt, and soda mixture (baking soda with 1/2 cup (125 ml) water).

Step 2

Close the pressure cooker and lock the lid. Set the machine to cook at high pressure. Set a timer to cook for 18 minutes.

Step 3

Open the pressure cooker, using the Quick Release method. Stir in chicken broth and basil.

Step 4

Using an immersion blender, purée the cheesy soup right in the pressure cooker.

Step 5

Stir in Cheddar cheese and heavy cream. Switch the pot to the sauté mode. Brine to a simmer. Cook, stirring, for a further 1 minute.

Step 6

Turn off the pressure cooker. Ladle soup into soup bowls. Serve hot.
