Pressure Cooker Broccoli Cheddar Soup

Ingredients

  • 4 tablespoons unsalted butter, chunked
  • 6 cups broccoli florets
  • 1 teaspoon salt
  • 1/2 teaspoon baking soda
  • 3 cups (750 ml) chicken broth
  • 2 tablespoons fresh basil leaves
  • 1/2 cup finely grated Cheddar cheese
  • 1/4 cup (60 ml) heavy cream

Method

Step 1

In a pressure cooker, melt butter over medium heat. Stir in broccoli florets, salt, and soda mixture (baking soda with 1/2 cup (125 ml) water).

Step 2

Close pressure cooker and lock the lid. Set burner heat to high pressure. When cooker reaches high pressure, reduce heat to low. Set timer to cook for 15 minutes.

Step 3

Open pressure cooker, using Quick Release method. Stir in chicken broth and basil.

Step 4

Using an immersion blender, purée cheesy soup right in pressure cooker.

Step 5

Stir in Cheddar cheese and heavy cream. Bring to simmer, stirring, over medium heat. Cook, stirring, for a further 1 minute.

Step 6

Turn off pressure cooker. Ladle soup into soup bowls. Serve hot.
