Pressure Cooker Cajun Rice and Sausage Recipe
- 2 medium carrots, peeled and chopped
- 2 celery ribs, chopped
- 1/2 yellow onion, peeled and diced
- 6 andouille sausages, sliced
- 3 Roma tomatoes, chopped
- 1 cup uncooked basmati rice, rinsed and drained
- 1 cup (250 ml) chicken stock
- 1 tablespoon Cajun seasoning
- 1/4 teaspoon salt
In a 6-quart (6 L) electric instant pot, combine all ingredients. Stir well.
Close the pot and lock the lid. Set the machine to cook at high pressure. Set the timer to cook for 3 minutes.
Using the natural Release method, bring pressure to normal. Carefully unlock and open the lid. Stir well before serving. Serve hot.
