Pressure cooker chicken thighs with figs recipe. Chicken thighs with dried figs,cinnamon and dry red wine cooked in pressure cooker.The perfect combination of figs and dry red wine gives to this tasty chicken recipe fantastic flavor.
- 2 tablespoons unsalted butter
- 8 bone-in and skin-on chicken thighs,trimmed
- 1/2 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- 1 medium yellow onion,peeled and chopped
- 6 dired figs,stemmed and halved
- 1/2 teaspoon ground cinnamon
- 3/4 cup (180 ml) dry red wine
Season chicken thighs with salt and black pepper.
In a pressure cooker,melt butter over medium heat. Working in a batches,add seasoned thighs to pressure cooker and brown,turning once,for about 6 minutes. Transfer browned chicken to a large bowl.
Add chopped onion to the pot. Cook,stirring,until translucent. Stir in figs and cinnamon.Cook,stirring,for a further 30 seconds. Pour in dry red wine. Return browned chicken thighs and any accumulated juices to the cooker.
Close pressure cooker and lock the lid. Set burner heat to high. When cooker reaches high pressure,reduce heat to low. Set timer to cook for 18 minutes.
Open pressure cooker,using Quick Release method. Using a tongs,transfer cooked chicken and figs to serving bowl. Pour wine sauce over. Serve hot.
