Pressure cooker chicken thighs with figs recipe. Chicken thighs with dried figs, cinnamon, and dry red wine cooked in a pressure cooker. The perfect combination of figs and dry red wine gives this tasty chicken recipe a fantastic flavor.

Pressure Cooker Chicken Thighs with Figs Recipe

Ingredients

  • 2 tablespoons unsalted butter
  • 8 bone-in and skin-on chicken thighs, trimmed
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 medium yellow onion,peeled and chopped
  • 6 dired figs, stemmed and halved
  • 1/2 teaspoon ground cinnamon
  • 3/4 cup (180 ml) dry red wine

Method

Step 1

Season chicken thighs with salt and black pepper.

Step 2

Melt the butter in a pressure cooker turned to sauté mode. Working in a batch, add seasoned thighs to the pressure cooker and brown, turning once, for about 6 minutes. Transfer browned chicken to a large bowl.

Step 3

Add chopped onion to the pot. Cook, stirring, until translucent. Stir in figs and cinnamon. Cook, stirring, for a further 30 seconds. Pour in dry red wine. Return browned chicken thighs and any accumulated juices to the cooker.

Step 4

Close the pot and lock the lid. Set the machine to cook at high. Set the timer to cook for 20 minutes.

Step 5

Open pressure cooker, using the Quick Release method. Using tongs, transfer cooked chicken and figs to the serving bowl. Pour the wine sauce over. Serve hot.
