Pressure cooker chicken thighs with figs recipe. Chicken thighs with dried figs, cinnamon, and dry red wine cooked in a pressure cooker. The perfect combination of figs and dry red wine gives to this tasty chicken recipe fantastic flavor.

Pressure Cooker Chicken Thighs with Figs Recipe

Ingredients

  • 2 tablespoons unsalted butter
  • 8 bone-in and skin-on chicken thighs,trimmed
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 medium yellow onion,peeled and chopped
  • 6 dired figs,stemmed and halved
  • 1/2 teaspoon ground cinnamon
  • 3/4 cup (180 ml) dry red wine

Method

Step 1

Season chicken thighs with salt and black pepper.

Step 2

In a pressure cooker,melt butter over medium heat. Working in a batches,add seasoned thighs to pressure cooker and brown,turning once,for about 6 minutes. Transfer browned chicken to a large bowl.

Step 3

Add chopped onion to the pot. Cook,stirring,until translucent. Stir in figs and cinnamon.Cook,stirring,for a further 30 seconds. Pour in dry red wine. Return browned chicken thighs and any accumulated juices to the cooker.

Step 4

Close pressure cooker and lock the lid. Set burner heat to high. When cooker reaches high pressure,reduce heat to low. Set timer to cook for 18 minutes.

Step 5

Open pressure cooker,using Quick Release method. Using a tongs,transfer cooked chicken and figs to serving bowl. Pour wine sauce over. Serve hot.
