Slow Cooker Lemon-Pepper Chicken Wings Recipe

Makes 4 servings

Ingredients: 2 pounds (960 g) chicken wings, For Sauce: 1 cup (250 ml) homemade reduced-sodium fat-free chicken broth, freshly squeezed juice of 2 lemons, 1 teaspoon (5 ml) lemon rind, 1½  teaspoons (7 ml) freshly ground black pepper, 2 cloves garlic, peeled and minced, 1/4 teaspoon (1 ml) paprika, 1 lemon, sliced

Instructions: Place chicken wings in 4-6-quart (4-6 L) slow cooker. In a medium mixing bowl, combine the remaining ingredients. Mix well and pour lemon mixture over chicken wings in the slow cooker. Top with lemon slices.

Close cooker and cook in a low-heat setting for 4-6 hours. Turn off the slow cooker and open the lid. Using tongs, transfer cooked chicken wings to a serving platter. Pour the sauce over. Serve hot.

If you like chicken wings with crisp skin, turn on a broiler, line a baking sheet with aluminum foil, and place cooked wings on it. Broil chicken wings for 3-5 minutes, then flip and broil for a further 3-5 minutes. Remove baked chicken from the broiler and serve immediately. Enjoy!

Ingredients

  • 1/2 cup (125 ml) freshly squeezed lemon juice
  • 1/4 cup (60 ml) olive oil
  • 1 tablespoon red wine vinegar
  • 1 teaspoon minced garlic
  • 1 teaspoon dried oregano
  • 1/4 teaspoon red pepper flakes
  • 3 pounds (1.44 kg) chicken wings
  • 1/2 teaspoon salt

Method

Step 1

In a pressure cooker, combine all ingredients, except chicken wings and salt. Stir well.

Step 2

Add chicken wings. Toss well to coat.

Step 3

Close the pot and lock the lid. Set the machine to cook at high pressure. Set timer to cook for 13 minutes.

Step 4

Using the Quick Release method, bring pressure to normal. Carefully unlock and open the lid. Using tongs, transfer cooked chicken wings to a large baking sheet, reserving cooking liquid. Sprinkle with salt.

Step 5

Place the oven rack 4-6 inches (10-15 cm) from the broiler element. Broil seasoned wings until browned and crisp, turning once (for about 4-6 minutes).

Step 6

Transfer cooked chicken wings to a serving platter. Pour reserved sauce over. Serve hot.
