Pressure Cooker Twice-Cooked Crispy Short Ribs Recipe

Makes 6 servings

Ingredients: 1 tablespoon (15 ml) each: of sweet paprika, cocoa powder, 2 teaspoons (10 ml) of dried oregano leaves, 1 teaspoon (5 ml) each: of red pepper flakes, ground cumin, onion powder, 1/2 teaspoon (3 ml) each: ground coriander, garlic powder, salt, 3Β½ pounds (1.7 kg) beef short ribs, trimmed, 1 tablespoon 915 ml) granulated sugar, 1 tablespoon (15 ml) balsamic vinegar, 2 tablespoons (30 ml) olive oil

Instructions: In an electric pressure cooker, combine paprika, cocoa powder, oregano, red pepper flakes, cumin, onion powder, coriander, garlic powder, and salt. Mix well. Add beef short ribs and stir well until the spice mixture evenly coats the meat. Pour water into the cooker to come halfway up the meat.

Close the pressure cooker and lock the lid. Set the machine to cook at high pressure. Set a timer to cook for 50 minutes.

Reduce pressure. Turn off the machine and allow its pressure to fall back to normal naturally, 20-25 minutes. Unlock the pressure cooker and open the lid. Transfer cooked beef ribs to a platter. Pour the sauce with any accumulated juices in the cooker into a small bowl. Refrigerate cooked ribs and sauce separately for at least 2 hours.

Remove the beef from the refrigerator for 20 minutes. Skim any congealed fat from the sauce. Pour and scrape the skimmed sauce into a small saucepan. Stir in granulated sugar and vinegar. Increase heat to high and bring mixture to a boil, stirring occasionally. Boil until the sauce thickens, for about 10 minutes.

In a large nonstick skillet, heat olive oil over medium heat. Add beef short ribs and fry until crisp, turning occasionally, for about 3 minutes per side. Pressure Cooker Sesame Short Ribs Recipe

Ingredients

  • 2 tablespoons toasted sesame oil
  • 3 pouns (1.44 kg) beef shrot ribs, trimmed
  • 1 large leek, white partsa only, halved, washed, and thinly sliced
  • 1 tablespoon minced fresh ginger
  • 1 tablespoon minced garlic
  • 1/2 teaspoon red pepper flakes
  • 1/4 cup packed dark brown sugar
  • 1/2 cup (125 ml) beef broth
  • 1/2 cup (125 ml) soy sauce
  • 2 tablespoons peanut butter
  • 3 medium scallions, green parts only, sliced
  • 1 tablespoon sesame seeds

Method

Step 1

Heat sesame oil in a 6-quart (6 L) electric pressure cooker turned to the browning setting. Working in batches, add beef ribs and brown on all sides, turning occasionally, for about 8 minutes. Remove cooked ribs from the pot and transfer to a large bowl.

Step 2

Add the leek, ginger, garlic, and red pepper flakes to the pot. Cook, stirring, until the leek begins to soften and the garlic to brown, for about 3 minutes. Stir in brown sugar and cook, stirring, for further 3o seconds until melted.

Step 3

Stir in beef broth, soy sauce, and peanut butter. Cook stirring until the butter dissolves, scraping up any browned bits on the bottom of the pot. Return meat to the pot.

Step 4

Close the pressure cooker and lock the lid. Set the machine to cook at high pressure. Set the timer to cook for 50 minutes.

Step 5

Turn off the machine. Allow its pressure to return to normal naturally, 20-25 minutes. Unlock and open the lid. Transfer cooked beef short ribs to serving bowls. Sprinkle each serving with sliced scallions and sesame seeds. Serve over cooked rice.
