Pressure Cooker Spicy Steamed Clams
Ingredients
- 1 cup (250 ml) chicken broth
- 1/2 cup (125 ml) dry white wine
- 3 tablespoons unsalted butter, cut into small bites
- 2 tablespoons tomato paste
- 2 teaspoons minced garlic
- 1/2 teaspoon red pepper flakes
- 28 clams, scrubbed
- 1/4 cup fresh parsley leaves, chopped
Method
Step 1
In a pressure cooker, combine chicken broth, dry white wine, butter, tomato paste, garlic, and red pepper flakes. Mix well. Cook over medium heat until tomato paste dissolved. Bring tomato mixture to a simmer, stirring occasionally. Stir in clams.
Step 2
Close the pot and lock the lid. Set the machine to cook at high pressure. Set the timer to cook for 7 minutes.
Step 3
Open pressure cooker, using the Quick Release method. Stir in chopped fresh parsley. Discard any unopened clams. Transfer cooked clams with accumulated juices to a serving bowl. Serve hot.
