It also preserves nutrients in the food better because it does not require much water to cook it and because it cooks at a high temperature which kills harmful bacteria faster than boiling or frying would do.

Step 1: Fill your pressure cooker with water and bring it to a boil on high heat. Add in your favorite spices such as garlic powder, ground black pepper, dried oregano, and dried thyme. Bring it back down to medium heat and add in your cleaned clams .

Ingredients

  • 1 cup (250 ml) chicken broth
  • 1/2 cup (125 ml) dry white wine
  • 3 tablespoons unsalted butter, cut into small bites
  • 2 tablespoons tomato paste
  • 2 teaspoons minced garlic
  • 1/2 teaspoon red pepper flakes
  • 28 clams, scrubbed
  • 1/4 cup fresh parsley leaves, chopped

Method

Step 1

In a pressure cooker, combine chicken broth, dry white wine, butter, tomato paste, garlic, and red pepper flakes. Mix well. Cook over medium heat until tomato paste dissolved. Bring tomato mixture to a simmer, stirring occasionally. Stir in clams.

Step 2

Close the pot and lock the lid. Set the machine to cook at high pressure. Set the timer to cook for 7 minutes.

Step 3

Open the pressure cooker, using the Quick Release method. Stir in chopped fresh parsley. Discard any unopened clams. Transfer cooked clams with accumulated juices to a serving bowl. Serve hot.
