Skillet-Fried Apricot Sausage Stew Recipe
This is a unique and delicious way to prepare sausages. Only 3-ingredient recipe!
Makes 1 serving
Ingredients: 2 oz (60 g) sausages, 1 teaspoon (5 ml) apricot preserves, 1 tablespoon (15 ml) freshly squeezed orange juice
Instructions: Heat a large nonstick skillet over medium-high heat. Place sausages and cover with water. Bring to a boil. Boil for about 10 minutes.
Remove boiled sausages from the heat. Drain, then return the skillet to the heat. Pour in the orange and stir in apricot jam. Simmer, covered, turning sausages occasionally, for 30 minutes or until the liquid has thickened.
Remove cooked sausages from the skillet and transfer to a serving plate. Pour apricot-orange sauce over. Serve hot.

Slow Cooker Apricot Sausage Stew Recipe
- 1/4 cup (60 ml) apricot jam
- 1/4 cup (60 ml) vinegar
- 3 tablespoons (45 ml) low-sodium soy sauce
- 1 teaspoon minced garlic
- 1/4 cup (60 ml) low-sodium chicken broth
- 3 tablespoons (45 ml) cornstarch
- 1 pound (480 g) smoked sausages, sliced
- 19 oz (570 ml) can pineapple chunks with juice
- 1 red bell pepper, cored and sliced
- 1 green bell pepper, cored and sliced
In 4-quart (4 L) slow cooker, combine apricot jam, vinegar, soy sauce, and garlic. Whisk well.
In a small mixing bowl, combine the cornstarch and chicken broth. Mix well and stir into the sauce in the slow cooker.
Stir in sliced sausages, pineaaples with their juices, and sliced bell peppers.
Close the slow cooker and cook on low-heat setting for 4-6 hours.
Turn off the pot and opne the lid. Stir apricot sausage stew well before serving. Ladle into soup bowls. Serve hot.
